You ever notice how customers think a restaurant just opens? Like we all just magically appear, fully stocked, fully smiling, like Disney employees. Yeah, no. Every shift actually starts with what I like to call the pre-game ritual of survival. You clock in, tie your apron like you're suiting up for battle, and then it begins. Sweeping, polishing, refilling. Every fork? Shined. Every glass? Spotless. Every salt shaker? Emotionally stable. Because if one thing is missing later, oh, you'll find out. Nothing like being ten tables deep and realizing you're out of napkins. Suddenly you're negotiating paper towels like it's a black market. And those little caddies? Yeah, those are your lifeline. Napkins, straws, condiments, that's not organization, that's strategy. Because once service starts, there's no time to think. You're either ready or you're running.
